We open our doors to visitors in order to share and teach people all over the world: learn how to make some of the most delicious bread recipes passed down from generation to the next.
Italy is a land of traditions. In our crountry bread is the staple food.
For Italians “pane” bread is fundamental to everyday eating, a basic part of life: a meal without bread is inconceivable!
Everybody loves an Italian Bread or Focaccia but those breads took millennia of perfecting recipes and a lot of passion to create the Italian Bread Art we love today.
Creating the amazing Italian Breads is a long process that takes several hours, sometimes days, and it involves a lot of attention and dedication to details so you can say the secret lies in the passion and technique and passion, not in the ingredients.
From amazing focaccias to crunchy and rustic loaves and sweet and savory breads, below are our bread program, divided in four bread workshop sections.
OUR GOAL
We believe bread workshops are workshops for life!
The goal of our bread making class and baking workshop is very simple: we want everyone learns to bake a real Italian bread like ciabatta, focaccia or another Italian loaf, or learn with our masterclass how to make your own sourdough starter or become a perfect bread-baker.
Ever wondered why Italian Focaccias or Italian breads (crusty, holey bread Ciabatta, Pane Rustico….) are so good?
Curious to know more about fresh yeast (“lievito di birra”) or “biga”, or “lievito madre” (sourdough starter), or many different kinds of wheat flours and the importance of gluten and proteins?
Our bread workshops will show you the techniques and secrets to bake classic rustic bread loaf or yummy focaccias with your normal home oven.
In our recipes are reminders of a long tradition of baking. You can learn all of the basic knowledge needed to become a confident baker.
During each of our bread workshops firstly we start to explain why the best bread flour is so important.
Secondly we will teach you how to make the dough only by hand (not with a mixer!).
Thirdly we will show you how to stretch the dough and how to bake it.
We will use the best flours and bread tools that you will be able to find back home.
Some bread requires a long long fermentation so even though you will be making everything from start to finish, some of the bread dough will be prepared ahead of time for the class.
During the various courses you will mix a bread dough, or get experience shaping and slashing focaccias and Italian Breads and learn techniques for home ovens.

• WEEK LONG SOURDOUGH BREAD COURSE: Fundamentals and classics of Italian Sourdough Breads – Baking Breads with Natural Leavening Yeast “Lievito Madre”: Enriched Breads, Ancient Grains Breads, Sourdough Focaccias and Flat Breads, Sourdough Bread Pastries, Myriad Forms.
