The rolling pin (in Italian “mattarello“) is the traditional way of rolling out the fresh egg pasta by hand.

Our foundational Week Long Pasta Training Course provides all the tools, resources and knowledge you need to deepen your practice and to start making fresh pastas and sauces.
The approach of the week long pasta course (5 days long) provides a renewed perspective of the pasta skills. One day we will visit the food markets in the pedestrian area of Padua.

AT THE END OF THE WEEK LONG PASTA TRAINING COURSE, YOU WILL BE ABLE TO:

Theory & new principles, difference between fresh pastas and dry and pasta, the importance of the ingredients (many different types of wheat flours);

How to make delicious pasta fillings;
How to make dozens of new different pastas from scratch;
How to make delicious and healthy Italian pasta sauces (traditional and classic)
How to make a perfect presentation.


The long pasta course includes:
– Teaching with a professional pasta master chef in English (5 hands on pasta lessons each one lasts 4-5 hrs);– Organic ingredients, materials.
– Food Markets Tour.
– Accommodation (but on request we will offer you a course without accommodation).
– Equipment (pasta tools) that is used during the pasta lessons.
