Traditionally, Ravioli is a festive dish. The art of preparing stuffed ravioli was a culinary art befitting celebrations, aristocratic parties, or royal banquets. But centuries later, ravioli spread among families as a way to recycle food leftovers by putting them inside little pockets of dough! Today, ravioli are an iconic food.

The term ravioli is applied to the several different varieties of envelopes of stuffed pasta filled with different types of stuffing and served or with a sauce or “in brodo”, broth.
The history of ravioli dates back to the Middle Ages. Around 1450 Maestro Martino, chef to the Patriach of Aquileia, wrote a cookbook “Libro de arte coquinaria“, where he gives instructions for ravioli and how to cook them in meat stock.

Ravioli is a typical stuffed pasta in Northern Italy. Each town of Northern Italy has at least six or seven different stuffings.
