Gnudi Making Class in Italy

Gnudi – a classic comfort food – is one of the few fresh pasta dishes found throughout Italy.
The main ingredient is ricotta rather than potato or wheat flour.
Gnudi – a sort of green ricotta gnocchi dumplings – means in Italian “nudi” ‘naked’. In fact gnudi is naked spinach and ricotta filling of ravioli without the egg pasta casing.
Gnudi (pronunciation “nyoo-dee” or “noo-dee.”)is a delicious pasta dish, linght, pillowy and tender “primo piatto”.

Gnudi can be served with a simple delicious basil tomato sauce or with the iconic brown butter, sage, and Parmigiano Reggiano DOP cheese sauce.
The secret to making them very well is water ingredient. If you do not squeeze well the spinach, gnudi will be not soft but tough.

Like all traditional Italian dishes there are many versions of Gnudi, with a few differences.
Each Italian family has its own recipe. At the Rolling Pin Cooking School we will use spinach but – when in Spring at the food market we can find wild local herbs we can make them with this local specialty.

Gnudi will be become an Italian staple that you will never comc off your menu!
