This special fresh pasta is made with an instrument know as “chitarra” (guitar).
The “chitarra” tool is like a guitar-like box. It contains strings designed to cut by hand, with the pressure of a small wooden rolling pin, a pasta sheet into long strands.
It is a egg based pasta originally from Abruzzo region in Italy.
The pasta dough is stretched and then is cut with the chitarra in a square-sided spaghetti.
It is known as “tonnarelli” in Rome Rome and throughout Lazio region, “spaghetti alla chitarra” or “maccheroni alla chitarra”.
Traditionally the spaghetti alla chitarra – like thick square-cut spaghetti but with a rough and porous texture – can be served with a rich sauce, usually plenty of pecorino romano cheese as accompaniments.
You will learn how to make a pasta sauce between:
- the real Carbonara sauce (Tonnarelli alla Carbonara)
- Tomato Basil Marinara sauce
- Gricia sauce or Amatriciana sauce
- the famous cheesy Cacio e pepe sauce
In Abruzzo region this pasta is served with a delicious Sausage and tomato sauce ragù.
The different steps for making the spaghetti alla chitarra is:
- make your dough by hand;
- divide the dough into sections and roll out to medium thickness;
- cut into strings, with the “chitarra”.
