In our pasta classes we keeping pasta-making traditions alive. We preserve heritage in the pasta process and we share the pasta knowledge to the future generations.
In the past Pasta Culture was an integral part of the lives of the majority of the Italian population. Unfortunately now this culture is disappearing.
Pasta traditions are commonly passed down in families and though lessons and cooking schools also help share knowledge.
The art of making pasta from zero covers specific knowledge and shared skills, reflects the use of specific traditional utensils, tools and processes, and includes various stages.
Organizations or educational institutions – like our cooking school – play a significant role in promoting and sustaining pasta culture through training and pasta programmes, pasta events and pasta projects.
Knowledge is power and – in the case of pasta making – an overview of the processes and components is all you need to start your pasta experience with us.

We wish to provide guests with authentic Italian recipes that include unusual, rare, forgotten, extinct pasta shapes, new or traditional sauce pairings and fillings.

Fresh Pasta: A Cultural Culinary History
Italy and the Italians have a long-standing love affair with pasta. Italy assumes a preeminent position in the art of making pasta!
The pasta made from a mixture of water and ground wheat – and possibly eggs or vegetables), characterized by its shape, obtained thanks to the
use of specific tool.
In the pasta history maybe the first fresh pasta shape is most surely the ‘gnocchi’ (potato gnocchi or squash gnocchi or spinach gnocchi).
Next, follow those formats obtained by cutting a rolled fresh pasta sheet – tagliolini, fettuccine, tagliatelle, or maltagliati), and the stuffed pasta stuffed (ravioli, agnolotti, anolini) with cheese, meat, and vegetables leftover, and sealed in molds or by hand. Other special formats by grating and shaping or pressing them on plates with holes (passatelli). Hand pasta extruders (torchi or bigolari) and pasta press were developed a few centuries ago.
At our cooking school we have an incredible series of pasta tools: small, medium, long rolling pins, stuffed pasta ravioli mods, pasta cutting wheels “speronelle”, wooden chitarra tool for homemade maccheroni, one “bigolaro”, a hand pasta making press with brass extruders “bigolaro” used to make bigoli – a sort of thick spaghetti.

2- geographic specificity establishes a connection between a type of fresh pasta and a specific place in Italy;

The Chef and Teacher will teach you how to make many different kinds of fresh pastas from scratch
Fettuccine or pappardelle? Spaghetti alla chitarra or ravioli? Tortellini or Gnocchi? Garganelli or Corzetti? Tagliatelle or Capellini? Cappellacci or Culurgiones? The list is endless. Forms of pasta (and multitude of fillings) can be staggering.
