It goes that the famous “tortellini” dates back to the days of the Roman Goddess Venus – in the Greek mythology Aphrodite – the goddess of love.
The legend says that in the fifteenth century in a small town between Modena and Bologna Venus stayed in a guest-house.
Here the innkeeper spied on the goddess and saw her tiny belly button.
The beautiful navel was the inspiration for the creation of a new stuffed pasta form, the tortellini.
Even if this is only a legend, there is something magic in it and superb tortellini is unbeatable. You can eat tortellini every day of your life and never tire of it.

Our mathernal nonna grandma – a superlative cook – made tortellini from scratch. It happened every December and involved the Christmas Holidays and our family’s tradition of making artisan tortellini.

Preparing homemade tortellini is a long process involving several different operations. It begins with the preparation of the egg pasta from scratch, then when the dough is ready, the filling is made, then the dough is rolled out, the tortellini are cut, shaped and cooked. Tortellini are prepared through an elaborate process requiring specific skills.
Nowadays, as in the past, the methods involved in preparing handmade tortellini constitute a sum of know-how and knowledge.
These practices are associated with a set of exclusive tools, instruments and utensils. The dish is accompanied by a variety of vegetables and meats, depending on the region, season and occasion.
It looks so easy to make it but it is a little difficult. So you need a special focused tortellini class!

Making homemade tortellini is a true delight!
That’s a labor of love!
Our chef will begin by teaching you how to make the pasta dough (no pasta machine!). Then, you will begin handcrafting tortellini featuring prosciutto Crudo di Parma, Pork Loin, Mortadella DOP Bologna, Nutmeg, and Parmigiano Reggiano cheese, as well as spinach and ricotta tortellini.
Our specialty is tiny tortellini that we wrap around our little fingers. The teacher is so efficient with her hand; stamping and sealing the tortellini. Incredible!
You’ll make tortellini by hand from scratch with organic ingredients.
We’ll use a wooden board, knife, a manual pasta machine Imperia, and a mixing bowl.
